eating back our calories

Rach and I have been going on a lot of long walks these days. The weather is finally nice... Hallelujah! So we're celebrating by literally walking all over town.


Sometimes though our long walks turn into shorter walks with a handful of stops at taco stands and cupcake shops. Today was one of those days. Si Fri joined us for a little cupcake magic and treated us to the best guac and chips in town!



 And it was perfect.

Beautiful Food and Regular Food




We saw The Grand Budapest Hotel last night. The scenery was breathtaking. Wes Anderson's films always have such great color editing and framing. I die. Before the movie I whipped up a little dinner of sauteed kale, garlic, peppers, 'shrooms, and cilantro with a couple of poached eggs on top. Now that I'm not pregnant I eat a minimum of two poached eggs a day. I've been trying to transition back into veganism, but the eggs are calling to me. so runny....ugh, sooooo runny. It's my non-vegan vice.

Weekend Surf

Stuffed Peppers.

Rach and I are participating in a 2 month long "Healthy Living Challenge"... It's actually pretty cool. Everyone puts $20 in the pot, and we each set our own individual healthy eating goals in addition to working out regularly... 
Rachel's goal is to eat a strict vegetarian diet while maintaining a healthy calorie limit... While mine is eating Low Carb with a healthy calorie limit. 
We're 2 weeks in and so far it's been incredible! At the end of 2 months, whoever has kept to their goals the closest, wins the pot of money! So we've got a lot riding on this challenge... 

The whole Low Carb thing has actually been a really great way for me to work on being creative in the kitchen... So, in an effort to stick to my goals (and not punish Freddy with them)...

Enter>>>> Stuffed Peppers (a recipe)


What you'll need:

2 red peppers
1/2 lb of lean ground beef
1 apple
1/2 yellow onion
8 mushrooms
2 handfuls of baby leaf spinach
1 T minced garlic
1/2 C. shredded cheese (any kind that you prefer)
salt, pepper, and any other seasoning you desire

Directions: 

Preheat oven to 350.

In medium pan brown beef, drain fat and set aside.
Peel apple and chop into small pieces, place in bowl. Add chopped onion and mushroom. Mix in garlic and seasoning. Pour bowl of apple/mushroom mix into medium pan and cook for 5 minutes or until apple and mushrooms are soft. Once apples soften, add spinach and cook until leaves wilt.

Remove from heat mixture from heat and add to pan of meat. Stir. 

Take 2 peppers and cut in half length wise. Remove all seeds. Sprinkle a pinch of shredded cheese in bottom of pepper. Then scoop meat/mushroom mixture into each pepper half and place on a foil lined pan. Sprinkle cheese on top and bake at 350 for 12-15 minutes. 


Then enjoy!

That year I didn't write...

Oh goodness. There's just too much to say. It's been a year guys... a YEAR since we last wrote.

And oh... what a year it has been.

Where do I even begin? Last January (when I last wrote) I was a couple months pregnant... and a couple months scared out of my mind. I mean guys, I was going to have a baby... a BABY people!

So... I basically spent the year getting more and more pregnant... 

I was pregnant through the winter... and then we moved to a new apartment... 

I was pregnant through the spring... then we went on a trip to Paris.... 

I was pregnant allllllllllllll the way through summer (ugh.)... where I basically spent my time floating in any body of water I could find... the pool at work... Lake Michigan... my bathtub... 

And then finally had this baby in fall.
 Officially the beginning of fall. Even though it was late August it counts as early fall. It was officially early fall because shortly after Q arrived I was delivered a piping hot pumpkin spice latte to my little hospital room and sipped that drink like I'd never had one before... sigh. Pure heaven.

Since then so much has changed and so little has at the same time... 
I've just been working on getting the hang of this whole Mama thing.
It's been easy... and hard... and scary... and fun... 
I've been exhausted every day of the last six month... but goodness, goodness! It has been wonderful. Q... Q is wonderful.

Time line of things passed:

I've graduated. I didn't walk. I don't like to waste time.

I got pregnant. It was unexpected, and easy...and hard.

We moved to Chicago and entered the working world. This world is not the easiest to break into while pregnant.

Elfa arrived late, and in a manner unexpected, but with all of her major and minor parts intact. 

2013 was a hard year for both Kristopher and I, we learned a lot, and grew quite a bit.

2014 is going to contain more change, which is not bad.

Short post, but I'll write more later, I've got to ease into this thing.
