Stuffed Peppers.

Rach and I are participating in a 2 month long "Healthy Living Challenge"... It's actually pretty cool. Everyone puts $20 in the pot, and we each set our own individual healthy eating goals in addition to working out regularly... 
Rachel's goal is to eat a strict vegetarian diet while maintaining a healthy calorie limit... While mine is eating Low Carb with a healthy calorie limit. 
We're 2 weeks in and so far it's been incredible! At the end of 2 months, whoever has kept to their goals the closest, wins the pot of money! So we've got a lot riding on this challenge... 

The whole Low Carb thing has actually been a really great way for me to work on being creative in the kitchen... So, in an effort to stick to my goals (and not punish Freddy with them)...

Enter>>>> Stuffed Peppers (a recipe)


What you'll need:

2 red peppers
1/2 lb of lean ground beef
1 apple
1/2 yellow onion
8 mushrooms
2 handfuls of baby leaf spinach
1 T minced garlic
1/2 C. shredded cheese (any kind that you prefer)
salt, pepper, and any other seasoning you desire

Directions: 

Preheat oven to 350.

In medium pan brown beef, drain fat and set aside.
Peel apple and chop into small pieces, place in bowl. Add chopped onion and mushroom. Mix in garlic and seasoning. Pour bowl of apple/mushroom mix into medium pan and cook for 5 minutes or until apple and mushrooms are soft. Once apples soften, add spinach and cook until leaves wilt.

Remove from heat mixture from heat and add to pan of meat. Stir. 

Take 2 peppers and cut in half length wise. Remove all seeds. Sprinkle a pinch of shredded cheese in bottom of pepper. Then scoop meat/mushroom mixture into each pepper half and place on a foil lined pan. Sprinkle cheese on top and bake at 350 for 12-15 minutes. 


Then enjoy!

How To "Woo" Your Hottie Hubs.



1. Shave your legs.
2. Agree to watch whatever episode of Psych or Last Resort that his little heart desires to watch.
3. Make this ridiculously good, amazing, yummy, "I die", Chicken Parmesan recipe.

Let the "woo-ing" begin...


"Woo-his-socks-off" Chicken Parm
        Makes 2

Ingredients:

- 2 chicken breasts
-1/4 cup of panko bread crumbs
-1/4 cup shredded Parmesan cheese
-1/2 teaspoon of dried oregano
-1/2 teaspoon of dried basil
-1/2 teaspoon of salt
-1/2 teaspoon of pepper
-1/2 teaspoon of garlic powder
-2 egg whites
-1 tablespoon of olive oil

Directions:

Trim the fat from both chicken breasts then cut in half, length wise.

Take all of the dry ingredients (including the cheese) and mix in small bowl

Take both egg whites and beat for 20 seconds or until combined

Heat olive oil in pan. While olive oil is heating take each chicken breast and dip in egg whites until completely wet. Next, dip wet chicken breasts in bread crumbs, cheese and spices. Place "breaded" chicken in pan. Cover until thoroughly cooked (inside of meat should be at least 165 degrees).

Serve with a yummy side or two. I usually serve this with broccoli (one of the only veggies Freddo will eat) and cous cous.


Seriously, this is one of Freddo's favorite dinners. He asks for it at least three times a week. It's actually pretty healthy as well- Double Win!

Hubs is satisfied and I can still fit into my jeans!

Recipe: Eggnog (sort of)...

There is something about eggnog that makes my heart all warm and happy.
Seeing it in a frosty cup with a splidge of nutmeg sprinkled on top...
*sigh*
Takes me immediately back to Grandma June's kitchen
 -full of piping hot ginger molasses cookies and Christmas carols in the background.
*sigh*
I love me some Christmas magic.
For a while now, I've been thinking I'll try my hand at a little homemade eggnog.
And this past weekend, after perusing pinterest for the perfect recipe...
I convinced the Hubs to help me whip up a batch of fresh nog.

The pictures were enticing and the recipe seemed simple enough.

Sadly, the "simple" recipe turned out to be a little more difficult than the Hub's and my's cooking capability.

I followed the directions to a "T"... or at least a "Q" or "R"...
I couldn't help it though... I was distracted by Hubs cute wiggly bum as he was trying to mix all the ingredients together... 
apparently it helps if your entire body is moving while you mix.
And somehow, in the midst of all of the yuletide magic I overcooked my nog.

Sadly, over cooked nog ends up having a very similar consistency to cottage cheese.
Oooh!
Scrumptious. 
No, not really.

After a "hail Mary" consisting of overnight refrigeration and lots of straining,
I ended up with one single cup of nog to be shared between the Hubs and I.

Fortunately, Si-Fri (sister-friend) was over to taste test as well
and is now convinced we should do it again and can make it better! Hip hip hooray!

I'm so lucky to have a husband who prefers his nog with lumps and a Si-Fri who has a degree in yummy goodness! Life is good. Lumpy nog or not!

Weekend in Review: Miniature Apple Pies Recipe.


I've come to the conclusion that everything tastes infinity times better if it's miniature.

I've also come to the conclusion that I should never use the wrong tools to core an apple.
It's tough stuff with a steak knife.
Do you think Julia Childs ever cut a finger or two in the kitchen? Probably not.


Anywho,
This weekend was full of loads of wonderfulness.
Hubs and I kicked it all off with a little party with some of our sweet friends from church.

In an effort to be fun & festive I decided I'd try my hand at miniature apple pies.
They were a BIG hit and suprah ca-ute.
I'm convinced if your food is cute, it'll taste extra good.
I'm sure there are lots of holes in this theory, but it held true Friday.


Introducing the easiest Miniature Apple Pie recipe ever invented. For realz.


Ingredients:
*5-6 apples (I used McIntosh because they have a really bright flavor)
*2 sheets of puff pastry
*1 teaspoon cinnamon
*1/4 cup brown sugar, packed
3 tablespoons of butter

Directions:
*Preheat oven to 400 and grease muffin tin.
*Roll both sheets of puff pastry out and cut into circles twice the size of your muffin tin holes.
*Place puff pastry in each muffin hole and then cover and refrigerate.
*Peel apples and dice.
*Mix diced apples, cinnamon, brown sugar and butter in sauce pan and heat on low, stirring constantly for 4-5 minutes or until apples begin to soften.
*Fill puff pastry with apple mixture and cover with remaining puff pastry.
*Bake for 20-25 minutes or until golden brown on top.

*Finally, serve to all your drooling guests!

Recipe: Pumpkin Pie Dip. Stop it!

Yum.

So, a couple of weeks ago I was at a friend's house who was hosting a little get together...
She served this pumpkin pie dip.

can. NOT. even. handle. it.

It is insanely yum-diddly-umptious! Like woah.


Ingredients:
*1 (29 ounce) can pumpkin puree
*3/4 cup apple juice
*2 teaspoons ground ginger
*1/2 teaspoon ground cloves
*1 1/2 cups white sugar
*2 teaspoons ground cinnamon
*1 teaspoon ground nutmeg
*1 box of reduced fat cream cheese



Directions:
  1. Combine pumpkin, apple juice, spices, and sugar in a large saucepan; stir well. Bring mixture to a boil. Reduce heat, and simmer for 30 minutes or until thickened. Stir frequently.
  2. Transfer to sterile containers and let cool.

3. Whip in 1 to 1.5 boxes of reduced fat cream cheese.
4. Scoop into pretty serving bowl.


5. Serve with cinnamon graham crackers and granny smith apples...
(ginger snap cookies are a huge hit too!)


This dip makes me so happy I can't even un-scrunch my face.
It's kind of bah-nah-nuhs... like, for realz.

Portabello Lovin'...


The weekend was....

Quiet morning runs... 
Joann runs with Elz-a-Bells
Coffee with si-fri...
Amazing bad, super cheesy (made for TV) movies with Hubs... 

And,
My newest love. Portobellos.

Behold! 
The easiest and most delicious-so recipe for a portobello burger you will ever receive...

Bestest Portobello Burga-

Ingredients
  • two portobello mushroom caps
  • 1 tablespoon olive oil
  • 1 tablespoon reduced balsamic vinegar
  • a splidge of salt and pepper
  • two pretzel buns (the best are from Trader Joes... for realz)
  • 1/2 tablespoon of mayo
  • 1/4 of a red onion... thinly sliced
  • 1/2 sliced avocado
  • 4 slices of sharp cheddar (Hubs and I love "Dubliner" Irish cheddar)
  • 1 tablespoon of Dijon mustard

Directions
  • Add the tablespoon of olive oil to pan heated on medium heat. Place mushrooms in olive oil. sprinkle splidge of salt and pepper, and drizzle reduced balsamic vinegar over mushrooms. Then cover mushrooms and let cook. Portobellos will be ready when they are tender (I always check mine with a fork). 
  • Next, spread your pretzel bun with mayo and place- mayo side down- in your hot pan... Let the bun soften and crisp up for a minute or two. 
  • Finally dress your portabello burger and enjoy!

By far, this is the easiest recipe ever... 
 
It takes about 10 minutes from start to finish to prepare and is Uh-mazing!!

Yum-diddly-um! Recipe Remix from Cate

I have this friend named Cate.
There are a few things you should know about her...

1. She's ridiculously good looking.
2. She has the ability to show grace, loyalty and compassion like very few people I've ever met.
3. She's one of the best people to travel through Europe with.
4. She knows a thing or two about cooking.

Cate and I used to live in Switzerland... we were those kind of friends who could sit and talk for hours and puke their hearts out to each other... you know... the friends who's conversations you walk away from feeling like the world's problems were just solved...
Cate helped fix the world... or at least how I saw it... she helped me mend my heart when I needed it and puff out my chest when it became deflated...
And the whole while... she fed me the best Zucchini Pesto Pasta a girl could ever dream of!

Last night I made a tweaked out version of Cate's pasta... The Hubs loved it... and with each bite I felt like all of life's problems were getting solved... since this pasta is so powerful... I thought I'd share the recipe with you! You can send a big "thank you"... to Cate!

Cate-y Cate's "solve the world's problems" Pesto Pasta
(serves 3ish)

Ingredients:
-4 green onions
-1 Tablespoon minced garlic
-1 Tablespoon olive oil
-1.5 cups sliced mushrooms
-1 thinly sliced zucchini
-1 teaspoon of black pepper
-a pinch of salt
-a pinch of red chili peppers
-2 Tablespoons of pesto
-3 cups uncooked pasta (I love it with penne or bowtie)
Directions:
1. Boil water and cook pasta to your liking.
2. While pasta is cooking; combine all other ingredients in a pan and saute until zucchini is soft. (I prefer to cook the veggies a bit longer to brown them a bit.)
3. Combine pasta with pesto and scoop into bowl. 
4. Place veggie mix atop the pesto pasta... and Voila! 

Enjoy... and let all your life's problems be solved!

Can I have a ba-naaan?

ohmuhWERD.
I have just stumbled upon the most delicious un-ice-cream ice cream ever.
AND it solves the issue of old bananas
AND fat knees.
so...
old bananas: take them to the freezer. And put them in it.

frozen bananas: take them to the blender. And blend them.
blended bananas: take them to your mouth. And eat them.

I was for sers skeptical when I saw this online, but I had to try it.
Because I love ice cream,
but I hate what it does to my knees.
Who wants fat knees?
Those things are the worst.

I added a tablespoon of ovaltine and a tablespoon of coconut milk....
and a proportionate amount of cool whip.

5 for 5: Hannah's 5 Reasons this week was wonderful...

1. Date night and yummy crepes with the Hubs!
2. Family in from out of town... not my family... Si-Fri's sis... but... it's practically the same thing...

3. We got our visas for China!!! We leave in a week and a half!!!! So so so excited!

4. Hubs surprised me with flowers for no reason... just cus... he's the best I tell ya!

5. And... new designs from EttaGrace! Just in time for spring!
