Vegan Meatloaf

This recipe marks my first foray into vegan cooking and (with a bit of tweaking to the original recipe) I'd say it was a resounding success. But, only if you're vegan...because all of the omnivores I fed this to said it was terrible. 
Which is....whatever, I liked it.

1. Saute

2. Mix

3. Bake

4. Add sauce und bake again


5. Enjoy. Even if everyone around is gagging from the sight

Ingredients:

  • 3 cloves garlic, minced
  • 1 onion, diced
  • 1 green or red bell pepper, diced
  • 3 tbsp vegetable or olive oil
  • 1 1/2 cup TVP+water to reconstitute
  • 1/2 cup oatmeal, uncooked
  • 1/3 cup ketchup
  • 1 tbsp garlic salt
  • 1/2 tsp pepper
  • 1/4 cup ketchup
  • 1/4 cup brown sugar
  • 1/2 tsp dry mustard
  • 1/2 tsp nutmeg

Preparation:

Pre-heat oven to 375 degrees.
Sautee the garlic, onion and bell peppers in olive oil for a few minutes, until onions are very soft.
In a large bowl, combine the onions and peppers with the TVP, oatmeal, 1/3 cup ketchip, garlic salt and pepper. Mix well, using your hands if needed.
Press into a lightly greased loaf pan. Cover with foil and bake for 30 minutes. Remove from oven when done.
Combine the remaining ingredients and spread over the top of the loaf. Cook, uncovered, for another 15 minutes, or until done.

p.s. I added 2 tsp of dry mustard to the "meat" mixture as well and some salt...
