Weekend in Review: Miniature Apple Pies Recipe.


I've come to the conclusion that everything tastes infinity times better if it's miniature.

I've also come to the conclusion that I should never use the wrong tools to core an apple.
It's tough stuff with a steak knife.
Do you think Julia Childs ever cut a finger or two in the kitchen? Probably not.


Anywho,
This weekend was full of loads of wonderfulness.
Hubs and I kicked it all off with a little party with some of our sweet friends from church.

In an effort to be fun & festive I decided I'd try my hand at miniature apple pies.
They were a BIG hit and suprah ca-ute.
I'm convinced if your food is cute, it'll taste extra good.
I'm sure there are lots of holes in this theory, but it held true Friday.


Introducing the easiest Miniature Apple Pie recipe ever invented. For realz.


Ingredients:
*5-6 apples (I used McIntosh because they have a really bright flavor)
*2 sheets of puff pastry
*1 teaspoon cinnamon
*1/4 cup brown sugar, packed
3 tablespoons of butter

Directions:
*Preheat oven to 400 and grease muffin tin.
*Roll both sheets of puff pastry out and cut into circles twice the size of your muffin tin holes.
*Place puff pastry in each muffin hole and then cover and refrigerate.
*Peel apples and dice.
*Mix diced apples, cinnamon, brown sugar and butter in sauce pan and heat on low, stirring constantly for 4-5 minutes or until apples begin to soften.
*Fill puff pastry with apple mixture and cover with remaining puff pastry.
*Bake for 20-25 minutes or until golden brown on top.

*Finally, serve to all your drooling guests!

Fall Blooms...

Oooh... this time of year is my favorite.
I absolutely love everything about fall...
The leaves changing, the crispness in the air, the perpetual coziness, the pumpkin everything...
and, is it just me or does coffee taste so much better in the fall?

Lately though, I've been so busy.
I've not been able to revel in fall as much as I've wanted to...

I travel a lot for work
and in the past two weeks I will have been to 6 different states and in 4 different time zones.
In addition to my regular job, I started teaching this year...
just two little classes on-line...
but they require a lot of me.
I'm also still working on my graduate degree...
It's a 60 credit hum dinger.

The neat thing though, is that even though I haven't been able to "soak in" fall as much as I'd like to...
(read: endless Gilmore Girls marathons and pumpkin patch weekends)
I've still found bits and pieces of it here and there throughout my weeks...


Case in point:
These fun little autumn inspired "Blooms" I made this week during some rare down time...

5 for 5: Hannah's Five Reasons... This Week Was Wonderful!

1. Had the most amazing photo shoot for EttaGrace this week... full of beautiful pink balloons and city skylines! Can't wait to show you all some of the pics and new designs next week! 
2. Yummy yummy yummy Italian pizza... dinner at Spacca Napolis in our hood with sweet friends.
3. I've been obsessed with all things eyelet lately... have been drooling over this amazing girl's shop!
4. Have newly committed myself to running regularly again... this quote makes me happy... truth. 
5. The Hubs and I are headed to an elegant garden wedding this summer and I've been racking my brain on what to wear... and then the beautiful and stylish Rose a la Mode posted this pic... def know what I'll be rockin' now! Love!

Since I can't even paint my thumb green....

Paper flowers really are my only option.

When I was in China, I saw loads of beautiful paper flowers in vases everywhere...
I was dying over each and every "petal"...
Unfortunately... paper + 1 packed suitcase = flaaaaaaaaaaat flower.

That said... I was putzing around on etsy the other day and came across some truly gorgeous and insanely affordable flowers!!! Check 'em out... and give these shops a little love!
